Ingredients
  

  • 1 pint assorted cherry or grape tomatoes halved or quartered
  • 8 to 10 fresh basil leaves chopped or torn
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • Pinch of salt
  • 4 slices Italian bread toasted
  • 4 slices BelGioioso fresh mozzarella
  • Balsamic glaze for drizzling optional

Instructions
 

  • In a small bowl, combine the chopped tomatoes, basil, garlic, olive oil, and salt. Let sit for 5–10 minutes to allow flavors to blend.
  • Lightly toast slices of Italian bread until golden and crisp.
  • Place a slice of BelGioioso mozzarella on each toast.
  • Spoon the tomato mixture generously over the mozzarella.
