Easy No-Bake Cheesecake
Built on the backbone of Wisconsin dairy, these cheesecakes are rich and creamy without being heavy, and elegant without requiring hours in the kitchen.
Ingredients
Crust
- 1 cup graham cracker crumbs
- 5 Tbsp butter
Cheesecake Filling
- 1 Tbsp granulated sugar
- ½ cup heavy whipping cream
- ¼ cup granulated sugar
- 8 oz cream cheese low fat or regular
- 3 Tbsp plain Greek yogurt
- 1 tsp lemon juice
- ½ tsp vanilla extract
Topping
- Cherry Pie Filling
- Optional: Use whatever toppings you would like! Whipped cream chocolate sauce, fresh strawberries, the possibilities are endless!
Instructions
- Line a 12-cup muffin pan with liners and set aside.
- Make the crust: Melt butter in a microwave safe bowl. Combine crumbs with melted butter and distribute into each cup, packing down. Freeze while you make the filling.
- Make the filling: Pour heavy whipping cream into a cold bowl and beat with an electric mixer until stiff peaks form. Chill in the fridge.
- In another bowl, beat softened cream cheese and sugar until creamy. Add yogurt, lemon juice and vanilla, mixing until well combined. Fold in the whipped cream.
- Distribute the cream cheese mixture into each prepared cup. Cover and chill in the fridge for 4 hours or overnight.
- Carefully remove cheesecakes from the pan and add your topping of choice.
