Wisconsin Loaded Mashed Potato Bake

Ingredients
  

  • Premade meatballs homemade or frozen
  • 1 cup chopped fresh basil
  • 1 cup chopped mixed vegetables
  • 3 lb yellow potatoes
  • 1 stick butter
  • Salt & nutmeg to taste
  • 1 cup gouda cheese

Instructions
 

  • Cook meatballs thoroughly and saute mixed vegetables until al dente.
  • Boil potatoes until done, then mash with butter, salt, nutmeg and ¼ cup cheese. Mix in sauteed vegetables.
  • Spread potatoes in butter greased casserole dish and smooth out the top.
  • Make indentations in the potatoes and place meatballs in the indentations. Sprinkle remaining cheese over the top.
  • Bake for 30 minutes in 350° F oven until meatballs are done and cheese has melted. Broil for 2 minutes to brown the cheese.
