Ingredients
  

  • 1 3/4 cup sugar
  • 1 1/2 cup butter (3 sticks)
  • 3 tbsp corn syrup
  • 3 tbsp water
  • 1 1/2 cup cashews

Instructions
 

  • In a heavy-bottomed saucepan, melt the unsalted butter over medium heat.
  • Stir in the water, granulated sugar and corn syrup. Continue to stir until the sugar dissolves completely.
  • Bring the mixture to a boil, then reduce the heat to medium-low. Use a candy thermometer to monitor the temperature. Cook until the mixture reaches 300°F (hard crack stage), stirring occasionally.
  • Remove the saucepan from heat. Add cashews, mixing well to ensure they are evenly distributed.
  • Immediately pour the hot mixture onto the prepared baking sheet. Use a spatula to spread it into an even layer, ensuring a thin and consistent thickness.
  • Allow to cool completely. Once set, break it into bite-sized pieces. The brittle will be firm and have a satisfying snap.
