Ground Pork Cabbage Roll Soup

- 2 cups green cabbage chopped
- 2 Tbsp. olive oil
- 1 lb. ground pork
- 1 yellow onion diced
- 3 cloves garlic minced
- 1 can diced tomatoes 28 oz. per can
- 1 can tomato sauce 14 oz .per can
- 4 cups chicken stock
- 1 tsp. paprika
- 1/2 Tbsp. marjoram or oregano
- 1 cup white rice uncooked
- 1 tsp. salt
- 1/2 tsp. pepper
In a large Dutch oven, heat the olive oil over medium-high heat.
Add the diced onion and ground pork. Cook for approximately 3-5 minutes.
Add in the minced garlic, paprika, marjoram, salt, and pepper. Stir to combine.
Stir in the cabbage, diced tomatoes, tomato sauce, rice, and chicken stock and bring the mixture to a low boil.
Reduce the heat to low and simmer for 15 minutes, or until the rice is tender and ground pork reaches an internal temperature of 160°F.
Stir throughout the process to be sure the rice doesn’t stick to the bottom. Once the rice is done, serve immediately.
