Ground Pork Cabbage Roll Soup

Ingredients
  

  • 2 cups green cabbage chopped
  • 2 Tbsp. olive oil
  • 1 lb. ground pork
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 28 oz. per can
  • 1 can tomato sauce 14 oz .per can
  • 4 cups chicken stock
  • 1 tsp. paprika
  • 1/2 Tbsp. marjoram or oregano
  • 1 cup white rice uncooked
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions
 

  • In a large Dutch oven, heat the olive oil over medium-high heat.
  • Add the diced onion and ground pork. Cook for approximately 3-5 minutes.
  • Add in the minced garlic, paprika, marjoram, salt, and pepper. Stir to combine.
  • Stir in the cabbage, diced tomatoes, tomato sauce, rice, and chicken stock and bring the mixture to a low boil.
  • Reduce the heat to low and simmer for 15 minutes, or until the rice is tender and ground pork reaches an internal temperature of 160°F.
  • Stir throughout the process to be sure the rice doesn’t stick to the bottom. Once the rice is done, serve immediately.
